Curry Powder

Just a variation from a friend who is Indian. ‘Curry powder’ is different the world over. Because curry means sauce and not a pice, is not one spice in and of itself.  You just don’t find ‘curry powder’ in a traditional Indian home.  Curry is seasoned to taste and has many variation for personal preference.   But we ‘American’s’ are used to a life of ease, so here is one version of a combination of curry spices.  (With the most excitatory spices omitted, such as black pepper.)

3 Tbsp paprika
1-2 Tbsp ground cumin
2 tsp ground fennel seed, optional
1 tsp ground mustard, optional (omit for those avoided spices)
1/8 to 1 tsp ground red pepper, to taste (or use red bell pepper for less spicy)
1-2 Tbsp ground coriander
1-2 Tbsp ground turmeric
1 tsp ground cardamom
1/2 tsp ground ginger

Combine all and store in a cool dry place, up to 2 months.
